Summer Snack Hack

(Longer daylight hours + more time at home) x warm weather3 = constant requests for snacks.  Here is one new formula for do-it-yourself ice cream to help occupy and amaze the kids. 

At least for a few minutes.

A homemade ice cream without the trip to the store for salt you can’t use at the table and a $200 ice cream maker.  Plus it uses fresh seasonal fruit that is flavorful and stuff you want them to eat anyway.

FRESH FRUIT ICE CREAM

 Yield: About 1 1/2 quarts 

1 (14 oz.) can sweetened condensed milk (NOT evaporated milk ,this stuff is really thick and viscous)
1 tablespoon vanilla extract
1 cup pureed or mashed seasonal fruit, such as peaches, strawberries, bananas and raspberries
1 pint (2 cups) heavy cream 

Combine sweetened condensed milk and vanilla in large bowl; stir in 1 cup pureed fruit. Fold in heavy cream. If you really want to pack a punch, and feel satisfied that you’re being sneaky with your own children, add ¼ cup of milled flax seed.  It will fly under the radar and deliver loads of healthy fiber and Omega 3 fatty acids.

Pour the mixture into a loaf pan or a 2-quart freezer container; cover and freeze for 6 hours or until firm. 

You can also pour this into fun Popsicle molds

Just be sure set them in the freezer overnight so that you don’t have to do the whole, “Okay kids, your snack will be ready in just six short hours.  Now go play until they are ready.”
